Traditional Soybean Degreasing Process:
The pressing method is divided into cold pressing method and hot pressing method.
The cold pressing is a method that directly press the softened soybean to extract the oil and obtain the defatted soybean without heating. Because the protein was not heated before pressing, the protein denaturation was small, and the soluble protein retention rate of defatted soybean could reach 80% ~ 90%.However, the defatted soybean obtained by the cold pressing method has a high fat content (5% to 10%), so it is easy to cause oxidative rancidity of the oil during storage.
The soybean is preheated and flattened, and heated by steam during the pressing process to reduce the viscosity of the oil and make it easy to flow out. For example, soybeans are heated at a temperature of about 125 °C before oil extraction. When oil is pressed, it is kept at a pressure of 137.2 to 166.6 MPa for 1 to 3 minutes, and the heat is above 130 °C, so it is called hot pressing. The defatted soybean obtained by the hot pressing method has low fat content, less water and easy to be pulverized, but the soy protein has a considerable heat denaturation, and the ratio of water-soluble protein (to the whole protein) is below 30%.
The solvent leaching method can be divided into two types, batch type and continuous type.Batch solvent leaching, because defatted soybeans and solvent separation are in direct contact with steam, so the degree of protein denaturation is high.
